Thanks to Faye for this recipe! These muffins have so much flavour, I really like them for breakfast. The recipe calls for orange peel which I was a bit hesitant about, but it certainly makes for a unique tasting treat.

Ingredients:
2 oranges
2 eggs
1/2 cup orange juice
1/4 cup olive oil
1 tsp vanilla
1 1/2 cups whole wheat flour
1/4 cup oat bran
1/2 cup brown sugar
1/2 tsp baking powder
3/4 cup craisins
1/2 cup raw sunflower seeds
1/2 cup crunchy flax seeds
1/2 cup raw slivered almonds
1/2 cup raw pumpkin seeds
Method:
1. Use a grater and shave off some of one of the orange peels, and save it for later to sprinkle on top before baking.
2. Place orange juice, eggs, vanilla, oil and oranges in a blender. Peel one orange and leave one with the peel one. I tried it with both oranges having the peel, but it was a bit too bitter for me!
3. In a large bowl, combine the wet and dry ingredients. Mix well, and fold in the nuts, seeds, etc.
4. Bake in the oven at 375 for 12-15 minutes for medium muffins.
Makes 12 muffins.
Tip: take the paper off the muffins as soon as they are slightly cooled, or else the paper might stick. This seems to happen with whole wheat/low oil muffins.
