Cod with Leeks and Basil

I went fishing for the first time this weekend! In Þingeyri, Iceland of all places. Way up north in the West Fjords. We caught about 12 cod. So now, the freezer is full of filets. Bring on the fish recipes!







Ingredients:

1 tbsp butter
1 handful of basil, chopped
2 cloves garlic
1 leek
a few splashes of chardonnay
Cod (or other white fish)
salt and pepper

Method:

1. Lightly sauté the leeks, garlic and basil, maybe 2-3 minutes.
2. Add the wine and the chopped up fish.
3. Cook until the fish is opaque. Drain if it's too watery.
3. Drizzle with olive oil, salt and pepper before serving.
